Blueberry Peace Cake
Do no harm Ingredients
- 1-1/2 – 2 cups fresh, clean organic blueberries
- A pinch of patience
- 1 tbsp extra virgin olive oil (for pan)
- 1 tbsp flour (for dusting pan)
- 4 tbsp unsalted butter, softened
- ~ 1/2 cup pure cane sugar
- 1 tsp pure vanilla extract
- 2 fresh pasture-raised large eggs
- 1 tsp aluminum-free baking powder
- 1-1/2 cups flour
- 1/2 cup milk
Instructions
- Handle ingredients with care. Preheat oven to 350°F.
- Oil and flour your glass cake or loaf pan.
- Mix butter and sugar until well combined. Stir in vanilla.
- Separate egg yolks from whites. Stir yolks into mixture.
- Stir in baking powder, then alternately add flour and milk.
- Coat blueberries with flour; gently fold into your batter.
- Beat egg whites to stiff peaks; fold them in, too.
- Clean while baking 40-45 minutes. Enjoy as needed.
