Blueberry Peace Cake

- 1 tablespoon extra virgin olive oil
- 1 tablespoon your favorite flour
- 4 tablespoons unsalted butter, softened
- 1/2 + 1/4 cup pure cane sugar
- 1 teaspoon pure vanilla extract
- 2 fresh pasture-raised large eggs
- 1 teaspoon aluminum-free baking powder
- 1-1/2 cups your favorite flour
- 1/2 cup your favorite milk
- 1-1/2 – 2 cups fresh organic blueberries
Instructions
- Preheat oven to 350°F.
- Prepare cake pan with oil and dust with flour.
- Cream butter and 1/2 cup sugar until fluffy; add vanilla.
- Separate egg whites and yolks.
- Add yolks to mixture and beat until creamy.
- Add baking powder, then alternately add flour and milk to form a stiff batter.
- Coat blueberries lightly with flour and fold gently into batter.
- Beat egg whites; add remaining 1/4 cup sugar and beat to stiff peaks.
- Fold egg whites into batter.
- Pour into pan. Bake ~38 minutes. Cool and enjoy!
